Gobi (Spiced Cauliflower)

    Ingredients

    • 2 tablespoons of olive oil
    • 1 head of cauliflower
    • 1 medium onion, sliced
    • 1 tomato, sliced
    • 1 tablespoon of ginger, thinly sliced
    • 1 jalapeno, sliced
    • 1 tablespoon of cumin
    • 1 teaspoon of turmeric powder
    • 1 teaspoon of coriander seeds
    • 1 teaspoon of salt (or to taste)

    Directions

    1. Thinly slice one of the onions.
    2. In a pot, heat half of the olive oil over medium heat. Add the sliced onion and sauté until it turns golden brown .
    3. Cut the cauliflower into bite sized pieces. Once the onions are golden brown, add the cauliflower pieces to the pot.
    4. Saute the jalapeno and ginger. 
    5. Add the sliced jalapeno, ginger, cumin, salt, turmeric, coriander seeds, and tomato to the pot.
    6. Saute the mixture for a few minutes until well combined. Cover the pot to allow the cauliflower to steam.
    7. Serve when the cauliflower is tender but still al dente.
