White peppercorns are produced from the same berry as the ubiquitous black pepper. Ripened pepper berries are soaked in water to remove their skins to transform into milder, fruitier versions. Our White Peppercorns are organically cultivated in the high ranges of Idukki, Kerala at a small family farm. The soaking process to remove the skins also slightly ferments the peppercorns, which imparts that elusive umami flavor to them.
This pale pepper is often used in soups, marinades, and stir fries. In Asian cuisine, white pepper replaces its black counterpart in lighter colored dishes to create aesthetically pleasing masterpieces. White pepper is more earthy and funkier than black pepper and we love it for its nuances. You will too!
