Our ginger is harvested at a small organic farm in the mountainous region of Sikkim in the Himalayas after a long growing cycle. Sikkim ginger - because of the higher altitude terrain - is acclaimed worldwide for its characteristic taste, flavor & texture.
We harvest the ginger after it has fully matured, slice it and dry it in solar dryers to lock in its essence. Our dried ginger is a great complement to fresh ginger, especially when the fresh variety is not readily available or practical (such as mixed with tea leaves). We actually prefer it fresh in our teas because of its mellow taste that retains the spiciness without the bitterness.
