Red Sichuan Peppercorns: Grown in the Indian Himalayan Region of Sikkim and known locally as Timmur, our Red Sichuan Peppercorns offer a unique mala (麻辣), or “numbing-spicy” flavor as compared to our Green Sichuan Peppercorns from China. The red peppercorns are picked later than their green counterparts, giving them a stronger flavor, but a more mild numbing effect. Why are they called “Sichuan Peppercorns” you might ask? Because even though they’re grown in India, the varietal is the same. Sikkim has wonderful terroir combined with a ban on chemical fertilizers, so we think these are some of THE best peppercorns you will taste. Let’s get ready to tingle!

Dalle Khursani Peppers: Our Dalle Khursani Peppers are grown on a tribal farm in the Himalayan mountainous region of Sikkim in Northeast India. Although this pepper looks like a beautiful dark red cherry beware of its spicy punch; it is a perfect pepper for spice lovers & chlli-heads. Dalle peppers are packed with robust flavors, minerals, and vitamins. Their intense heat and smoky pungency make our Dalle Khursani Peppers a deeply satisfying way of spicing up any dish. They are also fantastic additions to pickles, preserves & chutneys. (HINT: use our Dalle flakes on pizza for a memorable experience)

Kashmiri Chilies: Our Kashmiri Chilies are organically grown on a farm in rural Kashmir so they’ve earned the right to be called ‘Kashmiri’. They are sun-dried in the intense Himalayan sun and have a spicy smoky flavor that is as vibrant as their characteristic deep red color.

Although not super-spicy, there is nothing ‘mild’ about our Kashmiri Chilies and their ability to enhance the flavor and color of any dish is not to be underestimated. Add our Kashmiri Chilies to your curries, soups, stews or barbeque for a little extra spice in your life. They can also provide that unexpected twist to chocolates & desserts.
