Cumin is an ancient spice that’s been found in 4,000-year-old excavations in Syria and ancient Egypt. It is used ubiquitously in most of the world’s cuisines and adds a beautiful earthy and toasted flavor to any dish. We prefer to keep our cumin seeds whole to preserve its flavor for up to two years. Once powdered, it retains its flavor for just a couple of months, so we recommend using it freshly ground. For a memorable taste, dry toast it and give it a good whack in a mortar and pestle to release its essential oils.
