Hing, a.k.a. Asafoetida, a.k.a. ‘Devil’s Dung’ is a spice whose powerful flavor is matched only by its incredibly pungent scent. While said scent dissipates during the cooking process, its unique ‘umami’ flavor remains, providing a strong onion-like taste. Our pure hing is harvested from the sap of the ferula plant (a giant fennel) grown in the mountains of Kashmir.
Hing was first used as a spice in ancient Rome and was thought to have been brought to India by Alexander the Great. It was believed that asafoetida enhanced singers' voices. In the days of the Mughal aristocracy, the court singers of Agra and Delhi would eat a spoonful of asafoetida with butter and practice on the banks of the river Yamuna.
A small amount of this spice goes a long way, even in larger dishes. Include a pinch of our Hing in your curries, lentils & beans for an incomparable flavor!
