Matcha is a tea made from finely ground green tea leaves, whisked in hot water using a “chasen” (bamboo whisk). Although Matcha is thought to have originated in China, it was perfected in Japan by shade growing the leaves that give it its signature vibrant green color. Matcha plays an important part in the Japanese tea ceremony, the Sado or “the way of tea”, where tea preparation is used to emphasize beauty, simplicity and tranquility.
Our Matcha, grown organically on a small 8th generation family farm in Kyoto, offers a light astringency with subtle hints of green apple. It has a vibrant green color and a grassy, fruity aroma. This matcha is grown according to the strict principles of “tencha”, which include shade growing for 2-3 weeks, steaming and drying without rolling, and using only the tender leaves of the Camellia sinensis, varietal sinensis. Our fine Matcha is the “real deal”, and research shows that drinking authentic Matcha may significantly benefit brain, heart, and gut health because of its very high concentration of polyphenols.
